Chocolate Peanut Butter Protein Mousse



Oh my goodness, it's like a super rich moussey ice creamy protein delight! YUM. It's not quite mouse, not quite pudding... not quite ice cream...  it's a hybrid of of them all! It kind of reminds me of Rocky Road Ice cream! If you find that your Cool Whip loses volume, you can always throw the batter in an ice cream maker!  If this is the case, you could probably throw some slivered almonds into the ice cream maker if you want it to be more Rocky Road-like too!

I know, it's not the most 'natural' of recipes - but in times of cravings, you won't even think about the tub of ice cream in your fridge, if you have this recipe on hand. I promise!


1/2 cup Egg Whites (pasteurized)
1/8 Cup Unsweetened Cocoa
1/4 Cup  Natural Nut Butter (I prefer the no-stir for this recipe, though it's slightly less natural)
2-3 Scoops Chocolate Whey Protein
1 TBSP Walden Farms Caramel Syrup
8 Oz Thawed Cool Whip Light

- In a medium sized mixing bowl, use a hand mixer to whip all ingredients excluding the Cool Whip
- Beat until smooth and thick
- Gently fold thawed Cool Whip into chocolate batter
- Divide into 4-6 individual containers and freeze or put into ice cream maker


If you freeze into individual containers, let thaw a few minutes before eating!
